Like many people out there, I try to find alternative ingredients to recipes that I love — maybe this means making something gluten free, less sugar, or more protein packed. One ingredient I found that works well as a substitute in a lot of recipes I love is bananas! Banana’s can be a great ingredient in pancakes, lots of baked good, and in these little cookies — a nice mixture of peanut butter, banana, and chocolate.
eat snack and hit the spot, so I thought I'd share the recipe here.
What to have:
This makes about 10-15 cookies (depending on the size you make them)
2 very ripe bananas
5-6 large tablespoons of peanut butter — could be almond butter too. I typically choose something organic or with less sugar, but really you do what you want :)
2 teaspoons of coconut flour (could also use almond flour)
Pinch of salt
Chocolate chips sprinkled in — your choice
What to do:
Preheat the oven to 350f. Mash the bananas in a bowl - typically a fork works good for this, and add peanut butter and salt in - continue to mash and mix it all together.. Then add the coconut flour and continue to mix it in until it's a thick consistency. Sprinkle in the chocolate chips. Spray or grease a cookie sheet (or place tin foil on it) and use a spoon to drop the dough on the sheet, shaping how you wish. Bake for 7-10 minutes or until you see a nice golden brown.
